Chinese Style Fried Rice

This type of fried rice is one that is served with other main dishes in place of steamed rice.


Ingredients -


  1. Oil
  2. Eggs
  3. Salt
  4. White pepper
  5. Cooked jasmine rice
  6. Spring onion  (or shallots)

 

Preparation -


The rice is to be cooked and cooled before frying.

Serve with sliced cucumber, spring onion, lime on the side.

Cooking Instructions -

  1. Heat the oil in the wok until smokin' (very hot!).
  2. Crack the eggs into the oil and begin stirring it through the hot oil. 
  3. Before the eggs are completely cooked, add the rice and fry.
  4. Season with salt, white pepper.
  5. Add the spring onion and turn off the stove.

Other Options -

  1. Garlic and onions - chopped small.  Add to oil in the wok before the oil has heated.  Fry until garlic is golden then add eggs and rice as per above.
  2. Meat (chicken, shrimp/seafood, pork or mince pork) - sliced thin.  Add after the garlic and onion and before the egg.

Side Options -

  1. Lime
  2. Young shallots
  3. Cucumber
  4. Clear soup (recipe coming soon)
