Ingredients -
- Oil
- Eggs
- Salt
- White pepper
- Cooked jasmine rice
- Spring onion (or shallots)
Preparation -
The rice is to be cooked and cooled before frying.
Serve with sliced cucumber, spring onion, lime on the side.
Cooking Instructions -
- Heat the oil in the wok until smokin' (very hot!).
- Crack the eggs into the oil and begin stirring it through the hot oil.
- Before the eggs are completely cooked, add the rice and fry.
- Season with salt, white pepper.
- Add the spring onion and turn off the stove.
Other Options -
- Garlic and onions - chopped small. Add to oil in the wok before the oil has heated. Fry until garlic is golden then add eggs and rice as per above.
- Meat (chicken, shrimp/seafood, pork or mince pork) - sliced thin. Add after the garlic and onion and before the egg.
Side Options -
- Lime
- Young shallots
- Cucumber
