Old School Thai Fried Rice (with dark soy)




Ingredients -

  1. Oil
  2. Garlic
  3. Onions
  4. Eggs
  5. Tomatoes (small amount)
  6. Cooked jasmine rice
  7. Chinese broccoli  (or bak choy)
  8. Meat (chicken, pork)
  9. Light soy sauce
  10. Dark soy sauce
  11. Fish sauce
  12. White sugar (optional)
  13. White pepper

Preparation -

Garlic - chopped or crushed in mortar and pestle.
Onions - sliced in sections
Chinese broccoli (or bak choy) - cut into sections
Jasmine rice - cooked and cooled; frying hot rice can cause the fried rice to become soggy.

Cooking Instructions -

  1. Place oil in wok.
  2. Add garlic and onions before the oil is heated and cook until garlic is golden brown.
  3. Add meat and fry until cooked through.
  4. Add eggs and fry lightly.
  5. Add jasmine rice and fry until all ingredients mixed through.
  6. Add Chinese broccoli (or bak choy) and tomatoes.
  7. Season with light and dark soy (and sugar which is optional), fish sauce, white pepper.

Side Options -

  1. Young shallots
  2. Cucumber
  3. Clear soup (recipe coming soon)
